Baked Denver Omelet


2 tbsp Butter
1/2 Onion, chopped
1/2 Green Bell Pepper, chopped
1 c Cooked Ham, chopped
8 Eggs
1/4 c Milk
1/2 c Cheddar Cheese, shredded
Salt & Pepper, to taste
Preheat oven to 400 degrees. Grease a 10-inch round baking dish. Melt butter in large skillet over med heat. Cook and stir onion and bell pepper until soft, about 5 min. Stir in ham and continue cooking until heated through, about 5 min. Beat eggs and milk in large bowl. Stir in cheese and ham mix. Season with salt and pepper. Pour mix into prepared baking dish. Bake in oven until eggs are brown and puffy, about 25 min. Serve warm.
